Green Chili Enchiladas
I love Mexican food! We have been
eating a lot of chicken so I decided to make a beef enchiladas. They were
delicious! I used pre-made green chili sauce and added extra green chilies. I
didn't want to go through the hassle of making green chili sauce in our camper
so decided to go the easier route and buy the premade stuff. For the filling I
use ground beef, chili seasonings, canned corn, and cheese. I dipped the flour
tortillas in the green chili sauce, added the filling, and then rolled the
tortillas, and lastly put them in the pan. Then I put the remaining chili sauce
and cheese over the enchiladas and let them bake at 425 degrees for 15-20
minutes.
Oh my! Those enchiladas taste good! It was really fun to make. In the future, I would like to experiment with different ideas. What are your favorite enchilada recipes?
