here's what i am cooking...

I recently made this meal called Garlic Oil & Sauteed Pasta with Broccoli I found the recipe on Food Network. It was a very yummy dish & we all loved it! The dish is super easy to make. The recipe called for penne pasta but I used fettuccine pasta instead. I garnished the meal with Parmesan cheese.

P.S. Sorry that the post is late my internet service wasn't working properly. Better late than never! :)

Wow! It has been a long time since I made anything! We have been enjoying eating out with my grandparents so the past few weeks I have been writing about stuff we ate at a restaurant. I made French bread pizza last week & I enjoyed making and preparing it. It's a super easy and quick meal perfect for weekends. Since I am right now living and traveling in a camper meals like these are the best.

Ingredients & Instructions: 1 loaf of French bread, Mozzarella cheese, tomato sauce, & parsley flakes. Heat oven to 350. Put sauce, cheese, & parsley flakes on bread. Place in oven for 15 minutes. Cut into desired portions and enjoy!

I think I can say that I have had my fair share of eating out! This was our 2nd time eating at Papas & Beer a Mexican Restaurant located in Hendersonville NC. This meal was probably my favorite the enchiladas were good but the shredded beef burrito won! The restaurant gives you a lot of food so I only finished about half of the burrito so I had to take the rest home. Also the restaurant offers a a salsa bar and you are able to pick the different salsas you would like to taste. My favorite one was a creamy cilantro and lime salsa. For dessert I had churios and everyone else ate fried ice cream. You probably can tell why we are sick of eating out. Too much food!

Yesterday we went to Asiana Grill and Buffet near Asheville NC. This restaurant has an abundant selection of food. I have been to numerous buffets but this one beats all. The buffet tables are all in a circle so you stroll around and choose what you would like to eat. My favorite item was the California rolls, honey chicken, and the spring beans. I am not a big fan of sushi, but I really enjoyed the California rolls. If you are ever in the area, I would definitely recommend this place to eat.

Right now I am spending a week with my grandparents in North Carolina. Since we are helping them pack and move we have decided to eat out most of the time. I am all in for that! Our first restaurant was Papas and Beer a Mexican Restaurant in Hendersonville NC. It was yummy! I ordered chicken enchiladas with rice and beans. Since I lived in Colorado I have been so blessed because they were so many Mexican restaurants. This restaurant was different than the ones in Colorado, because the chicken enchiladas had tomatoes, and peppers inside. Also my favorite part of the meal was the salsa bar! I loved dipping my chips into the salsa.

Green Chili Enchiladas

I love Mexican food! We have been eating a lot of chicken so I decided to make a beef enchiladas. They were delicious! I used pre-made green chili sauce and added extra green chilies. I didn't want to go through the hassle of making green chili sauce in our camper so decided to go the easier route and buy the premade stuff. For the filling I use ground beef, chili seasonings, canned corn, and cheese. I dipped the flour tortillas in the green chili sauce, added the filling, and then rolled the tortillas, and lastly put them in the pan. Then I put the remaining chili sauce and cheese over the enchiladas and let them bake at 425 degrees for 15-20 minutes.
Oh my! Those enchiladas taste good! It was really fun to make. In the future, I would like to experiment with different ideas. What are your favorite enchilada recipes?

Buffalo Chicken Drumsticks with Ranch Dressing
I have made another buffalo chicken meal. It's so easy and quick to make in our camper! We all enjoy eating this meal and buffalo sauce has become our favorite! What I mainly do for the drumsticks is put them in a slow cooker add the buffalo sauce and let them cook for 3-4 hours on high. The drumsticks taste great with sour cream mixed with some ranch seasonings. This meal is so good! I totally recommend it!

Shortcut Strawberry Shortcake
I made this delicious strawberry shortcake in the Everglades National Park. It was a very simple and easy recipe that only called for biscuit dough, strawberries, and whip cream. I found the recipe on Good Housekeeping Magazine. One of my favorite things to do is read magazines, because I can find great recipes and helpful tips. My whole family enjoyed this shortcake it was a perfect ending to a hot day!

Roasted Red Pepper Chicken and Spicy Pasta
I really enjoyed cooking this meal! As always Better Homes and Gardens is my friend for finding pasta recipes. I pretty much followed the pasta recipe but I didn't used brocolini instead I used broccoli and I also didn't use parsley. But for the chicken I decided to create my own recipe (below) it was really fun to do and I enjoyed making it for my family.
Roasted Red Pepper Chicken
Ingredients
1 package of Chicken Breasts (7 pieces)
1 jar of Classico Sun Dried Tomato Pesto
1 package of mushrooms
1 cup of chicken broth
1/2 of a package of spinach
1 tablespoon of olive oil

Place 4 chicken breasts in a slow cooker season with salt. Then add 1/2 the can of pesto and 1/2 the package of mushrooms. Lastly add the last pieces of chicken, pesto, chicken broth, olive oil, and mushrooms to the slow cooker

Let the chicken cook on high for 2-4 hours or on low for 3-6 hours. When the chicken is almost done then add the spinach. Enjoy!

This pizza was a hit! I created the recipe myself (recipe below) with the helpful tips from friends at our old church in Colorado. The pizza is made with a cream cheese and sour cream sauce and fresh vegetables. It was a perfect meal for a hot day! I hope you enjoy!
Veggie Pizza Recipe
Ingredients:
1 package of refrigerated pizza dough
1/2 a stick of cream cheese
1 cup of sour cream
Hidden Valley Ranch seasonings
3 peppers
1/2 of broccoli
Cheddar cheese

Preheat oven to 425
Grease pan and place pizza dough on it. Stretch the dough until it fits nicely on the pan.
Place in oven for 15-20 minutes.
While dough is cooking, mix cream cheese in a bowl until it becomes creamy. Then add sour cream and sprinkle the ranch seasoning on it.
Cut peppers thinly and chop broccoli into small parts and place them aside.
Shred enough cheddar cheese for the pizza.
When the crust is ready, take it out of the oven and let it cool for 10-15 minutes or until the crust feels cool.
Spread the cream sauce on pizza and then sprinkle the vegetables and cheese.
Cut into small parts and enjoy!

P.S. If you aren't going to eat the pizza right away refrigerate it. It even tastes better the next day!

Italian Basil Pesto Pasta
I found this recipe on Better Homes and Garden again! I love finding recipes on that site! Anyway I used spinach instead of arugula and I didn't add vinegar to the pasta. Other than those ingredients I followed the recipe pretty well. It was a delicious but simple meal. Next time I make this I would love to make my own pesto. But since we are living in a camper that would be hard to do. The whole family enjoyed it so that was a plus!

Greek Meatball Gyro

I made this yummy dish for my family. This is the 3rd time I have made this dish on our trip. Everyone enjoys it, especially my brother! I found this recipe on Better Homes and Garden Magazine while in Yellowstone. It has turned into a favorite meal. The recipe calls for frozen meatballs but I just make my own.

I have gotten use to this recipe so I added my own twist to the yogurt dressing, by adding cumin and garlic powder. It tastes great!  I mostly use flatbread for the bread but I decided to use pita bread instead. I really enjoyed this meal and hope to make it again!

Chicken Sausage Pasta with Greens
Sorry about the lack of blog posts, lately I have been swamped with school work. So my blog post will not always be on time. Anyway, I made this yummy pasta dish last week for my family. They all enjoyed it. It was delicious! I have been enjoying recipes from Better Homes and Gardens it now has become my favorite spot to find enjoyable things to cook and eat!
I adjusted the recipe a little bit, by using turkey sausage instead of chicken sausage, using spinach instead of arugula, and adding broccoli and mushrooms. It was a yummy and quick meal! I made the meal in Austin, Texas.

 Buffalo Wings
Since this was the last game of the playoffs I decided to make buffalo wings. In the past I made Buffalo Drumsticks and I loved the taste of the buffalo sauce. These wings were delicious! Buffalo Wings Recipe

Chicken Dumpling Stew
During the winter, I love eating something warm and filling during the cold days. So I decided to make chicken dumpling stew from All Recipes, but I revised it by adding carrots, peas, and more seasonings. In the past I made this recipe before, but I used pre-made dumplings which didn’t turn as soft as I wanted them to be. The biscuit dough that you add turns out delicious and the dumplings are nice and soft! A perfect treat for the winter months!
